Scalloped Chicken & Potatoes

3 medium potatoes, peeled and thinly sliced, about 3 cups
2 carrots, thinly sliced (1 cup)
1/2 cup of chopped onion
1/4 cup of chopped celery
2 cups of chopped cooked chicken
3 tablespoons of all purpose flour
1 teaspoon of salt
2 cups of milk
1/3 cup of hot style catsup
1 teaspoon of Worcestershire sauce

Combine vegetables; carefully stir in chicken. In saucepan combine flour, salt, and dash  of pepper; blend in milk. Stir in catsup and Worcestershire. Cook and stir till bubbly. stir into vegetables. Turn into 2 quart casserole. Bake, covered, at 375ºF. till potatoes are tender, about 1 1/2 hours. Makes 6 servings


Old Fashioned Crunchy Fried Chicken

1 cup of all purpose flour
1/2 teaspoon of salt
1/4 teaspoon of pepper
2 eggs
1/2 cup of beer
1 broiler fryer chicken (2 to 2 1/2 pounds), cut up
Cooking oil

Mix flour, salt and pepper. Beat eggs with beer; add to flour mixture. Stir until smooth.
Dip chicken in batter, coating pieces well. Chill 1 hour. Fry chicken in hot oil 1/2 to 1 inch deep 15 minutes on one side. Turn; fry on other side 5 to 10 minutes, or until browned and done. Drain on absorbent paper. 4 servings


Five Fast Herb Blends for Chicken
1. Cajun Blend. Combine equal amounts of ground black pepper, ground red pepper, dried thyme, ground anise seeds and dried basil.
2. Greek Blend. Combine equal amounts of dried thyme, dried oregano, and garlic powder.
3. Italian Blend. Combine equal amounts of dried sage, dried savory and crushed fennel seeds.
4. Mediterranean Blend. Combine equal amounts of crushed dried rosemary, dried thyme, dried orange rind, and ground black pepper.
5. South of France blend - Combine equal amounts of dried basil, dried oregano and dried thyme.

Chinese Chicken Wings

1 bottle soy sauce
1/2 cup of brown sugar
1/2 teaspoon of ginger
1 tablespoon of garlic
About 6 to 7 pounds of chicken wingettes

Mix all ingredients. Add chicken. Marinate at least 4 hours; better if overnight. Cover, bake at 350ºF.  for 1 hour, then uncover and bake for 15 minutes longer at 500ºF. or cook on grill.
